Avocado and Chicken Mini Meal

Here's a great option for those who are trying to eat five smaller meals throughout the day, or for those that need a larger snack before or after a work out. Add some fruit or carrots to make it a little more substantial for lunch. Just be sure to dig your spoon all the way through the chicken mixture to get a little avocado in every bite. Yum! (It's also great with tuna.)

Makes 2 serving

1 avocado
1 5-ounce can shredded chicken, preferably low sodium
1/2 cup salsa

  • Slice the avocado in half and remove the pit.

  • Mix the chicken and salsa in a small bowl, then mold half of the mixture on each avocado half.

  • Store in a ziploc bag or tightly wrapped Saran wrap for up to 36 hours.

  • Enjoy!
